Strictly follow food safety and sanitation standards, implement food acceptance, refrigeration storage, raw and cooked separation, utensil disinfection, etc. operation processes, maintain kitchen cleanliness and meet the food and environmental protection bureau's requirements.
Assist the pastry department with its daily operations, including preparation, filling, rolling, wrapping, steaming, plating, and dishware cleaning, and support other kitchen positions with temporary adjustments as needed.
Work requirements
Have three or more years of practical experience in Cantonese dim sum making, familiar with the Cantonese dim sum production process and key technologies (such as control of cheng mein skin texture, yeast fermentation time, and filling seasoning balance), those with a background in tea houses, restaurants or chain food groups are preferred.
Holding a food industry employee certificate issued by the Hong Kong Food and Environmental Health Bureau, and having an effective basic first aid certificate or being willing to take the exam within three months of employment.
Have good hand-eye coordination and delicate touch, be able to focus for a long time on repetitive handwork, and have high self-expectations for the finished product's appearance, texture, and flavor.
Team player, able to adapt to high-pressure, fast-paced kitchen environment, accept shift work (including early morning, holidays and late night) and irregular overtime.
Have basic Cantonese communication skills, be able to clearly understand kitchen instructions; understanding Mandarin or English is an added bonus, which helps cross-departmental collaboration and serving diverse customer groups.
