Job Responsibilities
- Responsible for the preparation and cooking of Japanese cuisine, including sashimi, sushi, grilled items, simmered dishes, and tempura, among other traditional Japanese dishes, to ensure that the final product meets the authentic flavor and high-quality standards of Japanese cuisine.
- Participate in daily food acceptance, storage management and front-end processing work, strictly check freshness, sanitation and compliance, and implement food safety operating procedures.
- Collaborate with the kitchen team to complete opening preparation, support during operation and closing cleaning, maintain a clean and orderly kitchen, properly maintain equipment, and meet the food and environmental protection and fire safety requirements of the local authority.
- Comply with the Hong Kong Immigration Ordinance and employment contract related provisions, cooperate with foreign labor quota management, work visa document update and regular health declaration etc. Administrative procedures.
Work requirements
- Holding valid Japanese cuisine-related professional qualifications (such as a Japanese chef's license, JHSC certification or equivalent international recognition), with at least three years of regular Japanese restaurant kitchen practical experience.
- Proficient in Japanese knife skills, sauce preparation, fish processing, and fermented ingredient use, familiar with the different styles of kaiseki, kaiseki, and izakaya, and the logic and presentation of each.
- Able to communicate fluently in Mandarin, with basic Cantonese listening and speaking abilities; understand Hong Kong's local food regulations and customer habits, and adapt to a fast-paced service environment.
- Must meet the Hong Kong Special Administrative Region's "Supplementary Labor Program" (CAP) for foreign labor chefs, including age, health status, criminal record check, and employer guarantee arrangements.
